"Taste of Chinese New Year: Pairing Tea with Food for a Unique New Year Flavor" Seminar

On 25 February, the Maritime Silk Road Society organized the "Taste of Chinese New Year: Pairing Tea with Food for a Unique New Year Flavor" seminar. Miss Mavis Li, Operation Manager of The BARN, was the speaker.
Miss Li firstly introduced the relationship between tea and food, which can be divided into two main types, one is tea-food pairing, where tea is consumed with the meal and matched with each other according to the flavour and nature of the food; and another one is cooking food with tea, where tea is an ingredient consumed as a part of the dish to enrich the flavour of the dish.
Miss Li pointed out that tea is classified into six categories: green tea, white tea, yellow tea, Oolong tea, black tea and dark tea, based on the degree of oxidation of the tea polyphenols, and outlined the characteristics of the craftsmanship and formation of each type of tea. She also introduced in detail the health functions and characteristics of the six major types of tea, as well as their matching methods and culinary suggestions. During the seminar, participants tasted five freshly brewed teas, exchanged ideas and discussions.
